The Best Roasted Cauliflower Ever!

 

Cauliflower.  You know that white, round thing in the produce section that you just weren’t sure about.  Well, I’m here to tell you that it’s wonderful!  Not only does it taste great but it’s good for you.  One of the things I like most about it is that it doesn’t have a strong flavor so it can go with a lot of different foods and blend well.  It’s also very versatile.  You can eat it raw, blanched, roasted, riced and you can even make pizza dough out of it!  Yes, you heard me right…pizza dough.  That’s for another post though!

Cauliflower is packed with nutrition, too.  Look at what 1 cup of cauliflower contains.

It also has B vitamins (pantothenic acid, riboflavin and B6), calcium, iron, magnesium, potassium, phosphorous, zinc, manganese and selenium.  Now, I’d say that’s a lot of bang for your buck!  Today we are making roasted cauliflower.  A new favorite for me and the hubby!  And it’s SO easy!  Let me show you how easy it is!

First you cut the core out of the cauliflower.  I then will cut the flowerets into smaller pieces.

The ingredient list is small…

2 TBSP Olive Oil

1 tsp garlic powder

1 tsp onion powder

½-1 tsp sea salt (I use pink Himalayan salt that I buy in bulk)

That’s it!  I put my cauliflower in a plastic bowl that has a lid.  Add my seasonings and oil and then….shake, shake, shake!

Spread it all out on a cookie and roast at 400 for 30 minutes.

They will be nice and caramelized when they come out.  At this point you can sprinkle them with parmesan cheese if you like and enjoy!

There are so many variations you can make to change the flavor of this simple dish.  Use butter instead of olive oil, add herbs, or use fresh garlic (which I usually do but was in a time crunch on this particular night).  Be creative with your cauliflower!

ROASTED CAULIFLOWER

2 TBSP Olive Oil

1 tsp garlic powder

1 tsp onion powder

½-1 tsp sea salt (I use pink Himalayan salt that I buy in bulk)

 

Preheat oven to 400 degrees

Cut  the core out of the cauliflower.

Cut flowerets into small pieces.

Place Cauliflower in small bowl, add oil and seasonings and mix well.

Spread Cauliflower on sheet pan.

Roast cauliflower in 400 degree oven for 30 minutes (ovens may vary, you want it to be golden brown and caramelized).

Sprinkle with Parmesan cheese
